Ingredients for 2 servings:
- 200 g bacon (or breakfast bacon)
- 5 eggs
- 7 tbsp flour
- 0.38 liters of milk
- 2 egg whites
- 2 tbsp freshly chopped herbs (or frozen 8-herb mix)
- salt and pepper
- some butter
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Finely chop the bacon and fry it. Mix the eggs, milk, salt, pepper, and flour into a batter. Beat the egg whites until stiff peaks form and stir in. Mix the bacon and herbs into the batter, pour into a buttered ovenproof dish, and bake at approximately 200 degrees Celsius (400 degrees Fahrenheit) for about 10 minutes. Once a light crust forms, tear the batter apart with two forks, turn it over slightly, and continue baking (about 5-10 minutes). The Schmarrn should be crispy on the outside and soft on the inside. Serve with any salad.
