Ham Waffles with Leek Vegetables

Ingredients
 

For the leek vegetables

  • 50 g Raw ham
  • 4 Eggs
  • 150 g Butter
  • 250 g Flour
  • 1 tsp Baking powder
  • 200 ml Milk
  • 3 tbsp Grated Parmesan
  • 1 pinch Salt
  • 1 small Onion
  • 2 Rods Leek
  • 2 tbsp Sour cream
  • Some vegetable broth
  • Some butter to sauté
  • Salt, pepper, some nutmeg

Instructions
 

For the waffle batter:

  • Dice the ham and set aside. Separate the eggs and beat the egg whites until stiff and put in the refrigerator.
  • Mix the egg yolks and butter with the pinch of salt until frothy. Mix the flour with the baking powder and stir in the mixture briefly and slowly add the milk. When everything is mixed, fold in the egg whites and ham.
  • While the waffles are baking, you can devote yourself to the leek vegetables 🙂

Leek vegetables

  • Peel and dice the onion and sauté in butter. Wash the leek, peel and cut into fine rings and add to the onions and with sauté, deglaze the whole thing with a little vegetable stock. Finally stir in the sour cream and season
