Ingredients for 1 servings:

  • 100 g butter
  • 250 g sugar
  • 4 eggs
  • 200 g flour
  • 100 g almonds, sliced
  • 1 packet of vanilla sugar
  • ½ pack of baking powder
  • 1 jar gooseberries
  • 1 cup whipped cream
  • 1 pack of cream stiffener

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Make a batter from butter, 50g sugar, the egg yolks, the flour, vanilla sugar, and baking powder. Divide the batter between two equal-sized springform pans. Beat the egg whites until stiff, then gradually add the remaining 200g sugar. Spread the mixture evenly between the two dough halves and sprinkle each with flaked almonds. Bake at 180°C until golden brown, then let cool. Whip the cream with the cream stiffener until soft, then fold in the well-drained gooseberries. Spread this on one of the two prepared layers and place the other on top. Cut carefully, possibly cutting the top layer into pieces before placing it on the cake. It tastes delicious; we serve it at all our family gatherings. It’s quick, easy to prepare, and still looks great!
