Hazelnut Cake with Spelled Flour (wheat-free, Lactose-free)

  • 220 g Lactose-Free butter
  • 250 g Sugar
  • 1 packet Vanilla sugar
  • 5 piece Eggs, separated
  • 200 g Spelled flour type 630
  • 1 packet Baking powder
  • 150 g Hazelnut
  • 120 ml Lactose-Free milk
  • 2 tbsp Spelled breadcrumbs
  1. Preheat the oven to 175 degrees. Grease a bundt pan and sprinkle with spelled breadcrumbs. Mix the butter with sugar and vanilla sugar until frothy. Gradually stir in the egg yolks. Gradually stir in the flour, baking powder, hazelnuts, milk and the mineral water into the mixture. Beat the egg whites until stiff and fold into the mixture. Now fill the dough into the bundt pan and bake for 50 to 60 minutes. Place on the lowest level in the oven. Brush with chocolate icing or powder with icing sugar.
