Egg Biscuits (with Spelled Flour)

The perfect egg biscuits (with spelled flour) recipe with a picture and simple step-by-step instructions.

  • 4 Eggs
  • 1 pinch Salt
  • 150 g Cane sugar, fine
  • 200 g Spelled flour, type 1050
  • 0,5 tsp Vanilla flavor
  1. Separate the eggs, beat the egg whites with a pinch of salt until stiff and place in the refrigerator. Beat the egg yolks with the sugar to a light cream and stir in the vanilla flavor. Gradually fold the egg yolk and sugar cream into the whipped egg whites. Likewise, carefully sieve the spelled flour into the mixture in several portions and fold in. Put the mixture in a pouch and place small portions on a baking sheet lined with baking paper. Now bake the whole thing at approx. 180 degrees (top / bottom heat) for 10 to 15 minutes until they turn slightly golden brown from below. Immediately remove from the hot baking sheet and let cool on a wire rack.
