White Bread with Spelled Flour (wheat-free, Lactose-free)

The perfect white bread with spelled flour (wheat-free, lactose-free) recipe with a picture and simple step-by-step instructions.

  • 500 g Spelled flour type 630
  • 6 g Dry yeast
  • 1 tsp Salt
  • 1 tsp Vinegar
  • 200 g Mild yogurt 3.8% fat lactose-free e.g. MinusL
  • 300 ml Warm water
  1. Preheat the oven to 200 degrees. Grease the baking pan and dust with flour.
  2. Put all the ingredients in a bowl and knead with the dough hook until everything is evenly mixed. Pour the batter into the baking pan and cover with a cloth and let rise for 30 minutes.
  3. Turn the oven down to 180 degrees. Place a bowl of water on the bottom of the oven. Put the wire rack on the lowest level and place the baking pan on it. After about 10 minutes, cut into the dough with a knife. Bake for another 50 minutes. Total baking time 60 min.
  4. After the baking time, take the bread out of the baking pan and bake for another 5 minutes. This makes the white bread really crispy.
  5. Tip 5: the white bread tastes really delicious when toasted.
