Hazelnut chocolate muffins

Ingredients for 1 servings:

  • 65 g dark chocolate
  • 175 g hazelnuts, grated
  • 3 eggs
  • 150 g butter, soft
  • 1 pinch of salt
  • 125 g sugar
  • 1 ½ packets of vanilla sugar

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

makes about 12 muffins

Chop the chocolate into small pieces and mix with the grated hazelnuts. Separate the eggs. Beat the egg yolks with butter, salt, and sugar until creamy. Beat the egg whites until stiff peaks form, gradually adding the vanilla sugar. Briefly stir half of the egg whites into the batter with the chocolate mixture. Fold in the remaining egg whites. Pour the batter into a greased muffin tin and bake in a preheated oven at 160°C (convection oven) for approximately 30-40 minutes.
