Ingredients for 1 servings:

  • 1 large banana(s)
  • 120 g oat flakes, fine
  • 1 handful of prunes
  • 1 vanilla pod(s)
  • 1 handful of mixed nuts such as walnuts, cashews and almonds
  • 1 dashes orange juice, freshly squeezed

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Mash the banana, chop the prunes. Scrape the seeds from the vanilla pod, finely chop the nuts, and mix all the ingredients with the oats. This is best done by hand, as it creates a (mushy) smooth dough. Tip: I added a splash of freshly squeezed orange juice—but it’s not necessary. Then form small balls from the dough and flatten them, then place them on a rack lined with baking paper. Bake in a preheated oven at 180–200°C (top/bottom heat) for about 15 minutes. Tip: I add a little beetroot syrup (or honey) to half of the cookies, put them back in the turned-off oven, and let them sit for a while. This makes them a little crispier. But that’s a matter of taste. I formed 16 cookies from the dough.
