Ingredients for 1 servings:

  • 250 g flour, or wholemeal flour if desired
  • 60 g honey
  • 50 g butter, soft
  • 75 g applesauce
  • 1 egg(s)
  • 1 pinch of salt
  • 3 drops of vanilla flavor
  • 100 g chocolate, chopped
  • 50 g coconut milk

For the cookie dough, knead the flour, honey, butter, applesauce, egg, salt, and vanilla into a smooth dough. Wrap the dough in plastic wrap and chill in the refrigerator for about 30 minutes. In the meantime, make the chocolate filling. Heat the coconut milk and pour it over the chopped chocolate. For this recipe, I like to use the hard part from the can of coconut milk, which often settles on top. If the can is refrigerated beforehand, more will settle on top. Let the coconut-chocolate mixture sit for a short while and then mix well. Once the chocolate is completely melted, the filling can be refrigerated. Preheat the oven to 160°C (top/bottom heat). Roll out the cookie dough on a lightly floured surface to about half a centimeter thick. Cut out circles and place them on a baking sheet lined with parchment paper. Then prick the cookies with a fork to give them their characteristic appearance. Bake the cookies for about 15 minutes. Then remove from the oven and let cool completely on a wire rack. Finally, spread about a teaspoon of chocolate filling on each cookie and place another cookie on top. Let dry briefly again and enjoy. Makes 12 cookies. 180 kcal per serving. Note: You can also make the applesauce yourself. To do this, peel, core, and chop a small apple (it should weigh about 75 g). Then cook the chopped apple with a little water until soft, either in the microwave or in a small saucepan. Now mash the soft apple mixture with a fork or a potato masher until it reaches an applesauce-like consistency.
