Ingredients for 4 servings:
- 1 kg pork goulash
- 3 m.-sized onion(s)
- 1 large carrot(s)
- 2 garlic cloves
- 2 tbsp tomato paste
- 660 ml beer, bitter
- 3 tsp, heaped paprika powder, sweet
- 1 bay leaf
- 3 juniper berries
- 3 allspice berries
- 2 tsp, heaped marjoram, shredded
- 2 tsp mustard, medium hot
- 1 tsp mustard, sweet
- 1 tbsp sugar
- 200 ml sweet cream
- oil
- salt and pepper
- Sauce thickener, light
Instructions

for 3.5 l slow cooker
Peel and finely dice the carrot. Peel and finely dice the onions. Peel and finely dice the garlic. Rinse the meat and pat dry. Heat the oil in a pan until very hot and brown the goulash in batches to prevent liquid from forming in the pan. Once the meat pieces are browned, transfer them to the ceramic pot of the slow cooker. Add a little more oil to the pan and sauté the onion over medium heat for a few minutes until translucent. Add the garlic and carrot to the pan and fry briefly. Push the vegetables to the side of the pan and add the tomato paste. Toast briefly. Deglaze with the beer and stir everything well until the tomato paste is fully incorporated into the liquid. Then season with salt, add the mustard, sugar, and all the spices, stir everything well again, and bring to a boil. Caution: Do not season the sauce with pepper yet, as the pepper flavor will become too overpowering due to the long cooking time. Pour the sauce over the meat, put the lid on the slow cooker, and simmer for 3 hours on HIGH and then 1 hour on LOW. After the specified time, strain the contents of the slow cooker through a colander or sieve and collect the liquid in a saucepan. Remove the juniper berries, allspice, and bay leaf from the goulash and return the meat to the warm slow cooker. Stir the cream into the collected liquid, then drizzle in the sauce thickener and bring to a boil. The sauce should have a creamy consistency. Season well with salt, pepper, and sugar, if desired. Return the sauce to the slow cooker and stir everything gently. Serve the goulash with your choice of side dishes.
