Hearty cabbage soup

Ingredients for 8 servings:

  • 2 ½ liters vegetable broth
  • 1 ½ kg potatoes
  • 800 g carrot(s)
  • 1 large head of white cabbage
  • 2 onions
  • 1 bunch of spring onions
  • 100 g lard
  • 250 g bacon, diced

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

Bring the vegetable broth to a boil in a large pot. Brown the bacon cubes with finely chopped onions and spring onions in the lard. Then add them to the boiling vegetable broth along with the peeled potatoes. About 10 minutes later, add the peeled carrots and cabbage (quartered, cored, and then finely chopped). Simmer everything for another 10-15 minutes. I’ve always had a problem with cabbage soup, as most cabbage soups are very tasteless or bland. The bacon and lard add a decent and harmonious flavor to the soup.
