Ingredients
 

  • 2 Belle de Boskoop Apples
  • 1 tbsp Lemon juice
  • 0,5 tbsp Sugar
  • 50 ml Apple juice
  • 400 g Waxy potatoes
  • Salt and pepper
  • Freshly grated nutmeg
  • 1 size Onion
  • 1 tbsp Flour
  • 1 tbsp Clarified butter
  • 4 Stems Parsley
  • 75 ml Milk
  • 1 tbsp Butter
  • 200 g Farmer's blood sausage
  • 1 tsp Oil

Instructions
 

  • For the compote, peel, halve, core and cut the apples into large pieces. Bring to the boil in a saucepan with lemon juice, apple juice and sugar. Cover and simmer over medium heat for 3-4 minutes. Remove from stove.
  • Peel and wash the potatoes, cut in half or quarter according to size and cook covered in boiling salted water for about 25 minutes.
  • In the meantime, peel the onion and cut into fine rings. Mix the onion rings and flour so that the onion rings are coated all around. Heat the clarified butter in a small pan and fry the onion rings until golden. Drain on kitchen paper.
  • Drain the potatoes, add milk and butter, mash with a potato masher. Season the mashed potatoes with salt, pepper and nutmeg.
  • Remove the farmer's blood sausage from the skin. Heat the oil in a pan. Crumble into the farmer's blood sausage and fry vigorously over a high heat while turning. Pluck the parsley leaves from the stems. Arrange the mashed potatoes, apple compote, farmer's blood sausage and onion rings on plates. Serve garnished with parsley.
