Ingredients for 8 servings:
- 125 g Handkäse (Harzer)
- 200 g cream cheese
- 250 g butter
- 200 ml cream
- 1 tsp baking soda
- Caraway, optional

Cut the cheese and butter into small cubes. Heat both with the cream in a saucepan. Heat everything until the cheese and butter are melted. Stir constantly to prevent burning. Once everything is melted and the mixture is boiling, stir in a teaspoon of baking soda. The mixture will expand considerably, so always use a large pot. Let the cheese cook for about another 30 seconds, stirring continuously. If desired, add caraway seeds before the baking soda.
