Ingredients for 1 servings:

  • 200 g cheese (Harzer Roller)
  • 200 ml cream
  • 100 g butter
  • 250 g quark
  • 1 tsp baking soda

very simple recipe from southern Hesse

Chop the Harzer Roller into small pieces and slowly dissolve it in the cream with the butter over low heat, stirring frequently. Once boiling, remove the pan from the heat and add the quark. Stir in the scant teaspoon of baking soda at the end. Be careful—the mixture will rise! Immediately transfer to a storage container, let it cool, and refrigerate overnight. If you like, you can eat it as a spread with caraway seeds and/or diced onions marinated in oil and vinegar. The cooked cheese also tastes excellent as a dip for pretzel sticks or on a breaded schnitzel (the famous “Odenwälder Kochkäseschnitzel”).
