Ingredients for 1 servings:
- 750 g potatoes (blue truffle potatoes)
- 500 ml coconut milk
- 100 ml Amaretto
- 1 bottle of bitter almond flavor
- 500 g gelling sugar 2:1

Spread, potato jam
Boil the blue potatoes in salted water and mash them very finely with a hand blender. Then add 500 ml coconut milk, 500 g 2:1 gelling sugar, 100 ml Amaretto, and the bitter almond flavoring and boil for 4 minutes. Pour into washed screw-top jars, seal, and then turn upside down for 5 minutes. This jam makes a wonderful filling for cookies, and the color is fantastic.
