Ingredients for 4 servings:
- 3 tbsp olive oil
- 1 large onion(s), finely chopped
- 8 anchovy fillets, finely chopped
- 2 tbsp parsley, chopped
- 1 clove(s) garlic, finely chopped
- 1 stalk(s) celery, finely chopped
- 1 sprig(s) rosemary, or 1/2 tsp dried
- ½ tsp sage
- 500 g tomatoes, peeled, in small cubes
- 2 cl dry white wine
- ¾ tsp salt
- ½ tsp pepper
- e.g. Parmesan, grated
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes
Heat the oil in a saucepan and sauté the diced onion for 10 minutes. Add the anchovy fillets, parsley, garlic, celery, rosemary, and sage and simmer for 5 minutes. Add the diced tomatoes, wine, salt, and pepper. Simmer for another 5 minutes. Season to taste, if desired. Serve with grated Parmesan cheese.
