Ingredients for 6 servings:

  • 200 g flour
  • 100 g semolina (durum wheat semolina)
  • 1 pinch of salt
  • 140 ml water
  • 3 tbsp olive oil
  • 3 tbsp Parmesan, finely grated

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 55 minutes

Pasta from Piedmont

Combine flour, semolina, salt, and Parmesan cheese. Make a well in the center of the flour. Add water and olive oil to the well and knead the mixture into a smooth dough. Wrap the dough in cling film and let it rest for 30 minutes. Then cut off small pieces and form small balls. Roll the balls out on a table (like a dumpling). Cook in boiling salted water, then refresh in iced water, oil, and chill. Excellent with veal and lamb.
