Ingredients for 4 servings:

  • 1 kg potatoes, new
  • 3 tbsp oil
  • 1 tbsp Balsamic vinegar, white
  • ½ tsp mustard, medium hot
  • 1 pinch(s) of sugar
  • 2 tbsp mixed herbs, finely chopped
  • Salt and pepper, from the mill

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

from new small potatoes

Brush the potatoes thoroughly and boil in salted water for about 15 minutes, until tender. Whisk the vinegar, oil, sugar, mustard, salt, and pepper together in a small bowl, then add the chopped herbs. Drain the potatoes and toss with the herb mixture. Serve immediately. Herbs that pair well with this dish include parsley, chives, rosemary, marjoram, and basil.
