Herb salmon parcels with ham

Ingredients for 4 servings:

  • 2 bunch of mixed fresh herbs (e.g. coriander, parsley, basil and dill)
  • 125 ml extra virgin olive oil
  • 4 salmon fillets (200g each)
  • 8 slice(s) ham, raw
  • e.g. salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Preheat the oven to 175 degrees Celsius (350 degrees Fahrenheit). Roughly chop the herbs and place them in a mortar, mix with a little salt, and grind. Gradually add the olive oil until a thick paste forms. Spread the herb paste evenly over the top of the salmon fillets, then wrap each fillet in two slices of ham. Bake for about 20-25 minutes. Serve immediately on warmed plates.
