Hessian potato salad

Ingredients for 8 servings:

  • 2 kg potatoes, waxy
  • 500 g meat sausage
  • 1 jar of pickles
  • 2 onions
  • 3 garlic cloves, squeezed
  • 1 jar Miracle Whip
  • 2 tbsp mustard, medium hot
  • 5 eggs, hard boiled
  • White balsamic vinegar
  • salt and pepper
  • some sugar

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

I got it from Mama Just, it’s the whole family’s favorite potato salad

Boil the potatoes, let them cool, peel them, and cut them into half slices. Dice the onions, slice the cucumbers, and half slice the sausage. Mix everything together and season with crushed garlic, salt, pepper, and a little sugar. Add the Miracle Whip and mix well. Finish with mustard and balsamic vinegar. Let the potato salad sit in the refrigerator for at least 1 hour. Then taste and adjust the seasoning if necessary. Finally, add the hard-boiled, diced eggs and mix well.
