Instructions

a fluffy story with a slight nutty touch
Preparation: Mix the ingredients for the starter dough, cover the bowl with a lid or damp cloth, and let it rise at room temperature until doubled in size. This can take up to 40 minutes, depending on the room temperature. Mix the whole egg and one egg yolk with the milk and stir into the starter dough. Knead the sugar, flour, and tiger nut flour with the entire starter mixture for about 10 minutes until a firm dough forms, adding the salt shortly before the end. Now gradually add the butter in pieces and let the machine knead for another 3-5 minutes. Cover the bowl with cling film and let the dough rise at room temperature until doubled in size. This can take up to 90 minutes, depending on the room temperature. Knead the dough briefly again, divide it into portions of approx. 75 g, roll into round balls, place them on a baking tray lined with non-stick baking paper, and let them rest, covered with film, for 10 minutes. Form these into approximately 10 rolls, each 10-12 cm long and 2 cm thick, and place them on the baking tray, leaving a few millimeters of space between each roll so that they only meet at the sides as they rise. Let rise for another 20-30 minutes, covered with foil. Meanwhile, preheat the oven to 220°C (top and bottom heat). Brush with the beaten egg wash. Before placing the tray in the oven, fill an ovenproof dish with 50 ml of cold water. Immediately place the tray in the center of the preheated oven. Then immediately reduce the oven temperature to 180°C and bake for approximately 25 minutes.
