Homemade ketchup

Ingredients for 1 servings:

  • 500 g tomatoes, fresh or from a can
  • 2 cloves garlic
  • 1 onion(s)
  • 1 bunch of chives
  • 5 stalks of thyme
  • 5 sprigs of parsley
  • 2 tbsp balsamic vinegar
  • 2 tbsp Worcestershire sauce
  • 2 tbsp tomato paste
  • 3 tbsp sugar
  • 1 tbsp lemon juice
  • 1 tbsp peppercorns
  • 1 tsp salt
  • 1 tsp cornstarch
  • 1 tsp curry powder
  • 2 tsp paprika powder, sweet
  • 1 dashes Tabasco

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 5 minutes; Total time approx. 2 hours 20 minutes

Blanch and peel the tomatoes, then puree them with the remaining ingredients in a blender. Transfer the mixture to a saucepan and boil for 5 minutes. Strain through a sieve if desired. Pour the ketchup into boiled jars. Turn the jars upside down and let them cool.
