Horseradish dip à la Klaumix

Ingredients for 4 servings:

  • 200 g sour cream
  • 40 g horseradish, fresh
  • 40 g ginger
  • 4 cloves garlic
  • 8 chili peppers, e.g. Thai bird’s eye chili
  • ½ tbsp fish sauce
  • 1 tbsp maple syrup
  • 2 tbsp cream
  • 1 lime(s), organic
  • 2 tsp pepper

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

First, finely grate the horseradish and ginger (to avoid tears). Crush the garlic and finely slice the chili. Squeeze the lime. Pour the sour cream into a bowl, add all the ingredients, and mix well. Let it simmer for 1 hour. If you like it spicier, omit the cream and maple syrup.
