Ingredients for 1 servings:
- 250 g chili pepper(s), fresh, stems removed
- 2 garlic cloves, peeled; more if needed
- 250 ml rice vinegar
- 30 g sugar, brown
- 1 tbsp, leveled salt
Instructions

Place the chilies, garlic, and vinegar in a saucepan and bring to a boil, then simmer for 15 minutes. Reduce the heat, then add the sugar and salt and stir until dissolved. Blend in a food processor until a smooth, thin paste forms. If the paste is too thick, add a little more vinegar. Bottle and refrigerate. The spiciness depends on the chilies used. If using dried chilies, soak them in water first. This may change the consistency of the sauce slightly, but the flavor remains just as delicious. For refining and seasoning dishes.
