Ingredients for 4 servings:
- 1 egg white
- 10 ml water, warm
- 150 g wheat flour type 405, sifted
- 75 g wheat flour type 550, sifted
- 75 ml water, warm
- 25 ml milk, warm
- 15 g sugar
- 10 g butter, melted
- 1 packet of dry yeast
- 1 egg(s)
- 1 pinch of salt
- 100 g mayonnaise, e.g. homemade (see below)
- 2 tbsp natural yogurt, e.g. Greek
- 1 tbsp mustard, medium hot
- 1 tbsp capers
- 1 tbsp gherkin(s), diced
- 1 tbsp parsley
- ½ onion(s)
- some curry
- some gherkin broth
- 4 frankfurters
- 1 gherkin(s)
- 4 slices of processed cheese
- possibly cocktail tomatoes
Instructions
Working time approx. 45 minutes; Rest time approx. 1 hour 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 2 hours 35 minutes

Mix the egg whites with 10 ml of warm water in a small bowl and set aside. This will be used to brush the rolls before baking. Do not refrigerate. For the dough, mix the flour and salt. Place the water, milk, sugar, and yeast in another bowl and mix until the yeast has dissolved. Add to the flour, egg, and butter, and mix everything well for about 10-15 minutes. Let the dough rise in a warm place for 45 minutes, until it has doubled in size. Remove the dough from the bowl. Divide into four equal-sized pieces. Shape these into hot dog buns and place on a baking tray. A baguette tray is best. Let rise for another 45 minutes. Preheat the oven to 190°C (top/bottom heat). Brush the tops of the rolls with the egg white/water mixture. Then bake for 15 minutes, until the rolls are golden brown. Remove from the oven and let cool. For the sauce, mix the mayonnaise with the yogurt. Chop the capers, onion, and parsley and mix them with the remaining sauce ingredients into the mayonnaise. If desired, add the pickle juice to taste. Thinly slice the pickle and tomatoes. Heat the sausages. Top the hot dog buns with the sausage, sauce, pickle, tomatoes, and cheese and serve. Tip: Add 1 tablespoon of broth to the water with the sausages for a special flavor. Colorful tomatoes look great on the buns. Suggestion: You can top the hot dog with anything you like. It’s up to you to decide. Fried bacon with onions on the hot dog is also very tasty.
