Step by step to the special breakfast egg
With these instructions, your homemade poached eggs will be just perfect:
- Break a fresh egg into a cup. The yolk should remain whole.
- In a saucepan, bring 1 liter of water to a boil with 2-3 tablespoons of white wine vinegar. Poached eggs and vinegar make a perfect team, as the latter causes the egg white to coagulate faster. In this way, it hardens before the yolk does and you get the typical result: firm on the outside and creamy on the inside.
- Stir the boiling water with a spoon to create a whirlpool.
- Gently slide the raw egg into this whirlpool. The rotation helps the egg white to nestle as tightly as possible around the yolk. This creates the desired bag look that characterizes poached eggs.
- Cook the egg in the liquid over medium-high heat for 3-4 minutes, then use a ladle to scoop out the perfect result.
