Weight of egg white and yolk
Since an egg can more or less have certain effects, especially in baking recipes, the list of ingredients often includes the egg size. In order to be able to compare eggs, they are therefore divided into standard dimensions.

Egg knowledge while baking
Classic cake batters are based on the right ratio of eggs to flour, sugar, fat and, if necessary, a liquid such as water or milk. Hence the term heavy. The weight of the egg is used as a reference amount for any additional ingredients to be used in a 1:1 ratio, for example. This is how you bake with the egg weight specification:
- Weigh the egg and its shell
- 1 egg weight corresponds to the weight of an egg (5 egg weights correspond to 250 g for a 50 g egg)
- Advantage: you are independent of special egg sizes
Tip: If you have leftover protein, you can easily store it in the fridge for 2-3 days. Simply pour it into a clean glass jar with a screw cap. Alternatively, you can use a covered bowl. If you want to keep it longer, it’s best to freeze it.
Weight of heated eggs
Wondering if the weight of egg white or yolk changes when heated? Definitely yes, because the water contained in the egg evaporates when frying or cooking. The weight is reduced by up to 2%. However, this fact is not relevant for most cooking and baking recipes.
