How to make a perfect flank steak

Ingredients for 3 servings:

  • 1 flank steak approx. 1.2 kg
  • 1 tbsp thyme
  • 1 sprig(s) rosemary
  • 4 tbsp mustard
  • 250 g butter
  • 2 tbsp spice mix for herb butter

Instructions

Working time approx. 15 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 35 minutes

Brush the flank steak with some thyme and mustard and let it sit. Allow the butter to warm to lukewarm and mix with the seasoning. Grill the flank steak for 1-2 minutes on each side, then move it to the indirect grill and let it reach the desired internal temperature. Melt the butter in a pan and brush it over the flank steak.
