Ähzezupp (pea Soup)

The perfect ähzezupp (pea soup) recipe with a picture and simple step-by-step instructions.

  • 400 g Pea pods
  • 1,5 liter Chicken broth
  • 1,5 liter Thyme, parsley, sage, mint, chives
  • 150 g Diced Bacon
  • 100 ml Cream
  • Salt, white pepper, cumin, nutmeg, mint
  • 50 g Clarified butter
  1. The finely chopped shallots and the chopped ham are briefly steamed in clarified butter
  2. Fill up with broth and add the peas. Let everything simmer gently. Until the peas are soft.
  3. Puree with the blender and season with the spices and herbs.
  4. Serve with a toasted baguette and a few drops of pumpkin seed oil.
