Ähzezupp (pea Soup)
The perfect ähzezupp (pea soup) recipe with a picture and simple step-by-step instructions.
- 400 g Pea pods
- 1,5 liter Chicken broth
- 1,5 liter Thyme, parsley, sage, mint, chives
- 150 g Diced Bacon
- 100 ml Cream
- Salt, white pepper, cumin, nutmeg, mint
- 50 g Clarified butter
- The finely chopped shallots and the chopped ham are briefly steamed in clarified butter
- Fill up with broth and add the peas. Let everything simmer gently. Until the peas are soft.
- Puree with the blender and season with the spices and herbs.
- Serve with a toasted baguette and a few drops of pumpkin seed oil.
