Iced honey – spice – milk …
- 250 Milliliters Milk
- 1 tablespoon Wild flower honey
- 2 Cardamom pods
- 0,5 Cinnamon stick
- 1 Star anise
… with punch – cherries
- 100 g Frozen sour cherries
- 100 Milliliters Dry red wine
- 1 tablespoon Sugar
- 0,5 Cinnamon stick
- 1 Clove
- 1 teaspoon Food starch
and caramelized walnuts
- 1 tablespoon Brown sugar
- 4 Centiliters Walnut liqueur
- Walnut kernels
Serving
- Powdered sugar
- Ground cinnamon

Iced honey – spice – milk …
- Mix the milk with honey. Press on the cardamom pods a little. Add the spices to the honey milk. Bring the milk to the boil. Remove from heat and let steep for 30 minutes. Pour through a sieve, pour into a freezer and put in the freezer for two hours.

- Let the sour cherries thaw. Bring the red wine to the boil with sugar and spices. Add the sour cherries. Remove from heat and let steep for 15 minutes.
- Remove spices. Put the cherries in a colander. Catch punch. Mix the cornstarch with a little cold water until smooth. Heat the punch. Stir the mixed cornstarch into the hot liquid. Bring to the boil again while stirring. Take off the stove. Fold in the cherries. Let cool down.
and caramelized walnuts
- Caramelize the sugar in a pan. Deglaze with nut liqueur. Stir until the sugar has dissolved. Caramelize the walnuts in it. Let dry on a piece of parchment paper.
Serving
- Remove the honey-spice-milk from the freezer. Stir until frothy with the hand mixer. Pour into a deep plate or into a dessert bowl. Spread the cherries on top and add the walnuts. Dust with powdered sugar and cinnamon.
