a light winter dessert, low in calories and suitable for diabetics

Make a straight cut at the stem and blossom in the apples. Remove the core with a corer. Using a sharp knife, score the apple skin very thinly into 4 wedges. This is not necessary; it is easier to cut while eating. Cut a short cut off the stem of the fig to reveal the soft interior. Press chopped walnuts into the interior and fold the fig lengthwise like a crown cork. Place this into the apple and, with a pinch of butter, place on an ovenproof surface in the oven. Bake in a preheated oven at 200°C for 20 minutes. Vanilla sauce: Whisk the cornstarch with 6 tablespoons of milk, the vanilla, and the egg yolk. Bring the remaining milk to a boil and add the beaten cornstarch. Bring to a boil briefly, stirring briskly. Sweeten lightly with your choice of sweetener. Pour the sauce over the apple and sprinkle the apples with the remaining walnuts.
