Ingredients for 1 servings:

  • 220 g mashed potatoes
  • 1 tsp, leveled salt
  • 2 tbsp butter, melted
  • 60 g flour

Simple potato bread from Ireland, part of the Imbolc / Candlemas meal

Preheat the oven to 230°C. Toss the potatoes with salt and butter. Then add the flour and knead thoroughly – you may need to add more if needed. Roll out a circle of dough about 1.5 cm thick and place it on baking paper, cut into approximately 6-8 pieces. Bake the dough on a rack until golden brown (alternatively, bake on a large baking sheet, but then turn it over as soon as it’s browned on top). Serve with fresh butter or herb curd cheese.
