Italian Bean Salad
The perfect italian bean salad recipe with a picture and simple step-by-step instructions.
- 1 big can White beans
- 1 Pc. Clove of garlic
- 2 Pc. Onion
- 2 tbsp Tomato paste
- 150 g Dried tomatoes in oil, drained weight
- 1 tbsp Capers
- 0,5 bunch Parsely
- 3 tbsp White wine vinegar
- Salt pepper
- N.B. fresh tomatoes
- Drain the beans and place in a large bowl. Heat 6 tablespoons of the oil in which the tomatoes are marinated in a pan. Finely dice the onions and sweat in them. Squeeze in the garlic. Add tomato paste and roast briefly. Then add the whole mixture to the beans.
- Cut the drained sun-dried tomatoes into strips. Chop the parsley and capers and add everything to the beans. Top off with vinegar, salt and pepper. If you like, add a little more tomato oil.
- If you want, you can also fold in fresh, diced tomatoes. Let the salad stand for at least 1 hour before serving.
