Italian Bean Salad

The perfect italian bean salad recipe with a picture and simple step-by-step instructions.

  • 1 big can White beans
  • 1 Pc. Clove of garlic
  • 2 Pc. Onion
  • 2 tbsp Tomato paste
  • 150 g Dried tomatoes in oil, drained weight
  • 1 tbsp Capers
  • 0,5 bunch Parsely
  • 3 tbsp White wine vinegar
  • Salt pepper
  • N.B. fresh tomatoes
  1. Drain the beans and place in a large bowl. Heat 6 tablespoons of the oil in which the tomatoes are marinated in a pan. Finely dice the onions and sweat in them. Squeeze in the garlic. Add tomato paste and roast briefly. Then add the whole mixture to the beans.
  2. Cut the drained sun-dried tomatoes into strips. Chop the parsley and capers and add everything to the beans. Top off with vinegar, salt and pepper. If you like, add a little more tomato oil.
  3. If you want, you can also fold in fresh, diced tomatoes. Let the salad stand for at least 1 hour before serving.
