Italian-style tomato salad

Ingredients for 4 servings:

  • 800 g vine tomatoes
  • 1 m.-sized onion(s)
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar, lighter
  • 2 tbsp water
  • 1 handful of basil
  • some oregano
  • e.g. salt and pepper
  • 1 dashes lemon juice
  • 1 dashes sweetener, liquid
  • some basil leaves for garnishing

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

with light dressing and fresh herbs

Peel the onion and slice it. Slice the washed tomatoes and add them to a large bowl with the onions. Whisk together the dressing by mixing in the olive oil, balsamic vinegar, and water. Stir in the finely chopped herbs. Add a dash of sweetener and lemon juice, and season with salt and pepper. Pour over the tomatoes and onions and fold in. Let the salad marinate in the refrigerator for at least an hour.
