Ingredients for 4 servings:
- 1 cucumber(s)
- 2 tbsp salt
- 1 lemon(s)
- 2 tbsp, heaped salad cream (Miracle Whip Balance)
- 8 tsp sugar
- Salt and pepper, black
- ½ small onion(s)
Instructions

A fresh, light salad with a hint of citrus.
Use the cucumber with or without the skin, as desired. If you want to use the cucumber with the skin, wash it thoroughly before processing. Then cut the cucumber into wafer-thin slices and place them in a sieve. Mix well with 2 tablespoons of salt and let it stand for about 10 minutes. In the meantime, halve the lemon and squeeze out the juice. Finely dice the onion. In a bowl, whisk the lemon juice and sugar until dissolved. Stir in the salad cream until well combined. Add the finely chopped onion and season the sauce with salt and pepper. Rinse the cucumbers well with water in a sieve to remove excess salt. Add the rinsed cucumbers (without squeezing out the water or anything like that) to the bowl with the sauce and mix well. The salad tastes best when left to sit in the refrigerator for a while, but can also be served straight away.
