Jam & Co: Grapefruit Ginger

- 5 Grapefruit
- 30 g Fresh ginger
- 1 Lemon
- 500 g Preserving sugar 2: 1
- Cut the “lid” off the top and bottom of the grapefruit and then peel it from top to bottom with a sharp knife. There must be no more skin on the pulp. Now filter the fruits and squeeze out the remaining juice. Weigh 950 g and place in a large saucepan. Add lemon zest and juice.
- Peel the ginger and cut it into very fine cubes. Stir in the ginger with the preserving sugar. Let it steep for an hour. Then bring the mixture to the boil and let it simmer for 4 minutes. Now fill everything to the brim in prepared jars and close tightly with the lid. Tip: I always pour boiling water over the lids to make them germ-free.
