Ingredients for 1 servings:
- 400 g plums, pitted
- 400 g apples, pitted
- 100 ml orange juice
- 2 lemons, untreated
- 100 g raisins
- 6 cl rum
- 1 tbsp allspice
- ½ vanilla pod(s)
- 1 stalk(s) cinnamon
- 1 kg gelling sugar (1:1)
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes
with apples, plums, raisins and spices
Soak the raisins in rum. Wash the fruit, remove the seeds, and cut into pieces. Grate the zest from one lemon. Fillet both lemons and reserve the juice. Finely grind the allspice. Scrape out the vanilla pod. Mix the apples and plums with the orange and lemon juice, sugar, vanilla, and allspice, and puree with a hand blender. I don’t make it completely puree, but leave a few pieces whole. Add the drained raisins, vanilla seeds, and cinnamon stick. Bring to a boil and simmer over reduced heat for 5-10 minutes, stirring constantly, until the desired consistency is reached (test for setting!). Add the rum and lemon pieces and simmer for another minute. Immediately pour into very clean jam jars, place lids down on a cloth, and turn over again after 5-10 minutes.
