Ingredients for 3 servings:
- 225 g unsalted butter
- 100 g sugar, fine, or powdered sugar
- 200 g flour
- 100 g ground almonds
- 150 g jam (raspberry)
- Flour , for the work surface
Instructions
Working time approx. 40 minutes; Rest time approx. 5 hours; Cooking/baking time approx. 30 minutes; Total time approx. 6 hours 10 minutes
English cookies with jam
Knead the butter, sugar, flour, and almonds into a dough and form it into a ball. Wrap it in cling film and place it in the refrigerator for at least 5 hours. Preheat the oven to 140°C. Remove the dough from the refrigerator and knead until it is soft and pliable. Sprinkle the work surface generously with flour and roll out the dough. The dough should be about 5 mm thick. Cut out round cookies about 6 cm in diameter. Carefully remove half of the cookies with a knife and place them on a greased baking sheet. Cut out the center of the remaining cookies, either a circle, heart, or star shape (about 2 cm thick), and place these on the baking sheet. Bake in the oven for about 30 minutes. Remove the cookies from the oven and place them directly on a wire rack to cool. When the cookies are completely cool, put a dollop of jam on the bottom cookies. Be generous, as the jam should overflow a little. Place the top cookies on top. If desired, you can sprinkle powdered sugar over them. Makes about 36 cookies.
