Ingredients for 1 servings:

  • 250 g butter
  • 130 g brown sugar
  • 2 tsp vanilla, liquid
  • 250 g flour, sifted
  • 100 g oat flakes

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Cream together the butter, sugar, and vanilla until creamy. Gradually stir in the flour and oats with a wooden spoon. Knead the dough with your hands if necessary. Wrap in foil and let it rest in the refrigerator for 2 hours. Roll out on a floured surface to a thickness of about 5 mm and cut into desired shapes. Place on a baking sheet and prick several times with a fork. Bake at 160°C for about 20 minutes, until the shortbread is golden brown. Cool on the sheet for about 2-3 minutes, then cool completely on a wire rack. Tip: The dough will be particularly crumbly if you replace a quarter of the total flour with rice flour.
