like sauerkraut, only finer, for three preserving jars

Prepare 3 preserving jars. Finely shred the cabbage and season with salt. Knead everything thoroughly. The cabbage should release moisture. Divide everything among the jars and mash firmly, pressing out all the air. Seal the jars and let stand in a warm, dark place for 1 week. The cabbage tastes like sauerkraut, only finer.
