Ingredients for 1 servings:

  • 400 dandelion flowers
  • 2 liters of water
  • 2 lemons
  • 2 kg sugar

Recipe from Koberice/Czech Republic

Pick the blossoms in the morning when the sun is shining (best in April/May). Rinse briefly under running water. Place in a large 3-4 liter pot. Add 2 liters of cold water and the deseeded, thinly sliced ​​lemons. Boil for 15 minutes. Then let stand for 24 hours. Press the mixture through a fine plastic sieve (not metal!) or a linen cloth. Pour 2 kg of sugar into the resulting juice and boil until syrupy. This can take 5 hours, stirring frequently. Pour into small screw-top jars while still hot and seal tightly. A spoonful of honey daily is said to protect against colds, but it’s also delicious as a spread.
