Juicy potato casserole with cheese and Bockwurst

Ingredients for 4 servings:

  • 1 kg potatoes
  • 2 eggs
  • 1 large onion(s)
  • 150 g cheese, grated or shredded
  • 1 jar of Bockwurst
  • salt and pepper

Working time approx. 35 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 20 minutes

Peel the potatoes and grate them finely into a larger bowl. Finely dice the onion or grate it with the potatoes. Add the eggs, season with salt and pepper, and mix everything well. Slice the sausages. Add the sausage slices and cheese to the potato mixture and transfer everything to a casserole dish. Cover the dish with aluminum foil and bake at 160°C for about 30 minutes. Then remove the foil and bake for another 10-15 minutes to give the casserole a nice brown color. If you are using a deep dish, extend the baking time with the foil. Serve with a green salad. Tip: If you leave out the cheese or use reduced-calorie cheese and, for example, poultry sausage, this is also a very tasty, low-calorie dish that is really filling.
