Turkey strips with parsnip, zucchini and peppers

Ingredients for 2 servings:

  • 2 turkey schnitzels
  • 1 red bell pepper(s)
  • 1 zucchini
  • 1 m.-large parsnip(s)
  • 250 ml vegetable stock
  • 3 tbsp cream cheese, low-fat
  • 2 spring onions
  • oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the turkey cutlets into strips and fry in a pan. Trim the vegetables and cut into bite-sized pieces. Add the spring onions, then the parsnips to the shredded meat and fry briefly. Now add the bell peppers and zucchini. Deglaze with vegetable stock and simmer briefly until the vegetables are tender but still firm to the bite. Finally, stir in the cream cheese and season with salt and pepper.
