Ingredients for 4 servings:

  • 160 g flour, sifted
  • 250 ml milk
  • 4 egg yolks
  • 2 pinches of salt
  • 4 egg whites
  • 2 tbsp sugar
  • 1 packet of vanilla sugar
  • 40 g raisins
  • 60 g butter
  • Powdered sugar, for dusting

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Combine the flour, milk, egg yolk, and salt to form a smooth batter. Beat the egg whites with the sugar and vanilla sugar until stiff peaks form and fold into the batter along with the raisins. Heat 30g of butter in each of two large pans (about 30cm in diameter), pour in the batter, and smooth it out. Briefly bake on the stovetop, then finish baking in the oven at 190°C for about 8-10 minutes. Tear into pieces with two forks. Dust with powdered sugar to serve.
