Ingredients for 1 servings:

  • 50 g wheat flour
  • 2 eggs
  • ⅛ liter milk, 3.8%
  • 1 pinch of salt
  • 1 tbsp, heaped sugar
  • 1 tbsp raisins
  • 1 tbsp almond flakes
  • 20 g butter
  • powdered sugar
  • 3 apples
  • some water
  • Sugar
  • Cinnamon
  • lemon juice

Instructions

Working time approx. 15 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Peel, core, and chop the apples. Cook in a little water, just enough to cover the apples, until they fall apart. Remove from the heat and discard any excess water. Mash with a potato masher or fork and season with cinnamon, sugar, and lemon juice. Transfer to a small bowl. Separate the eggs. Beat the egg whites until stiff peaks form and refrigerate. Whisk the egg yolks, flour, salt, milk, and sugar until creamy and let stand for 15 minutes. Carefully fold in the beaten egg whites before baking. Melt 10g of butter in a large pan. Pour in the batter and scatter the raisins and flaked almonds on top. Wait until the bottom is golden brown. Spread 10g of butter on the top before turning. This ensures both sides are aromatically browned. Turn over and tear into pieces with two spatulas. Finish baking. Sprinkle with plenty of powdered sugar and serve with the applesauce.
