Ingredients for 4 servings:

  • 1 kg potatoes (waxy), cooked, peeled, sliced
  • 2 onions, cut into fine rings
  • 1 head of lettuce, endive, cut into fine strips and watered
  • 1 cup(s) meat broth, hot
  • Mustard to taste
  • Vinegar to taste
  • 1 tbsp oil
  • Gravy to taste
  • 1 pinch of nutmeg
  • salt and pepper

My variation of the Swabian potato salad

The potatoes should still be warm. Blend the dressing ingredients (mustard, vinegar, oil, gravy, nutmeg, a little broth). Gently mix with the potatoes, onions, and endive. Add enough broth so the mixture is nice and mushy, but not floating. Season with salt and pepper. Serve immediately. Delicious with Gschwollene (naked sausages). Tip: Instead of endive, you can also add very thinly sliced ​​cucumber.
