Kassel roast pork

Ingredients for 6 servings:

  • 2 kg smoked pork
  • 1 bunch of soup vegetables
  • 1 large onion(s)
  • 1 ½ tbsp mustard
  • 250 ml beef broth or chicken broth
  • salt and pepper
  • Rapeseed oil or similar oil

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 2 hours 30 minutes; Total time approx. 3 hours

Kasseler roast with sauce

Dice the vegetables and onion. Sear the smoked pork in the oil until hot but briefly on all sides. Then remove the smoked pork and sauté the vegetables and onions until translucent. Meanwhile, brush the smoked pork with the mustard and season generously with salt and pepper. Place the vegetables and oil in a roasting tin, place the smoked pork on top, and add the stock. Cover and place in the oven at 200°C for 2 hours. If the weight differs, allow half an hour in the oven for every 0.5 kg. At the end of the dish, pass the vegetables through a sieve and thicken into a sauce if necessary. Bread dumplings and apple-flavored red cabbage go well with this dish.
