Ingredients for 3 servings:

  • 350 g smoked pork, boneless, cut into cubes
  • 1 tbsp oil
  • 2 onions, diced
  • 1 tsp sweet paprika powder
  • 300 g sauerkraut
  • 1 tbsp sugar
  • 1 tbsp vinegar, e.g. white wine vinegar
  • 500 g Schupfnudeln, from the refrigerated counter
  • 1 tbsp butter
  • some parsley, some stalks, finely chopped
  • 200 g sour cream

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

In a pan, fry the smoked pork cubes in oil until browned on all sides, remove from the pan, and set aside. Add the onions to the same pan and sprinkle with paprika. Add the sauerkraut, sugar, and vinegar and sauté for about 3 minutes. Meanwhile, in a second pan, fry the potato dumplings in butter. Add the smoked pork to the sauerkraut and mix. Add the parsley, sour cream, and fried potato dumplings to the sauerkraut mixture and mix well.
