Kasseler vegetable stew with a subtle spiciness

Ingredients for 2 servings:

  • 1 onion(s)
  • 200 g potatoes, peeled
  • 150 g leek, cleaned
  • 150 g carrot(s), cleaned
  • 80 g celery
  • 400 ml vegetable stock
  • 200 g smoked pork
  • Salt and pepper, white
  • nutmeg
  • 1 bay leaf
  • chili flakes
  • 1 tsp parsley, chopped
  • 1 tbsp chives
  • Oil or margarine for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Peel and dice the onion. Slice the leek, carrots, and celery. Dice the potatoes. Heat oil or margarine in a pan and fry the diced onions until browned. Add the vegetables and potatoes and fry briefly. Add the vegetable stock, spices, bay leaf, and a little chili, and stir in. Let everything simmer for 10 minutes. Cut the smoked pork into small cubes and add to the stew, stir in, and simmer for another 10 minutes. Add the parsley and chives 1 minute before the end of the cooking time. Season the smoked pork and vegetable stew to taste and adjust the seasoning if necessary.
