Ingredients for 4 servings:
- 3 apples, grated with peel
- 60 g spelt, crushed
- 90 g spelt flour, wholemeal
- 13 g cream of tartar baking powder, approx.
- ½ tsp cinnamon powder
- 1 tbsp sweetener (granulated sweetener, heaped tbsp) or approx. 10 – 15 g sugar
- 15 g cornflakes
- 20 g raisins
- 10 g oat flakes, wholegrain
- 30 g muesli (fruit muesli)
- some cardamom
- some spice mix (apple pie spice)
- 30 ml water
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes
for 4 large, fruity and delicious rolls
Mix the apples, raisins, and spices and let them sit for a while, if desired. Mix the dry ingredients (spelt flour, flour, baking powder, sweetener, cornflakes, oats, and muesli) together. Preheat the oven to 180°C (top/bottom heat). Gradually add the dry ingredients to the apple mixture. Carefully add the water and mix thoroughly. Using 2 tablespoons, form a total of 4 rolls from this mixture and place them on a baking sheet. To ensure even rolls, weigh the entire mixture and divide by 4. Bake in the center of the oven for about 35-40 minutes. Don’t let it set in; the rolls will still be very moist even after baking, but that’s precisely what makes them so great!
